I upvoted all the answers suggesting IntelliJ IDEA. It's not only the best Java IDE for Mac, but for all platforms on which it deploys I would say. If you work part time on Mac, part time on Windows, the one license covers both (last time I checked anyway). And three cheers for the support on this end as well. I was having trouble with a plugin and they got back to me quickly and fixed the problem.
